The 7-inch blade is handcrafted in Solingen from Thyssen-Krupp 1.4116 stainless steel with a ceramic stonewashed finish, precision laser cut from cold-rolled steel and hand-finished to a 3-stage 15° edge. Kullens — hollow-ground indentations along the blade — keep food from clinging when you're slicing through wet vegetables or sticky proteins. The flat grind, 57 HRC hardness, and ambidextrous design make this a serious workhorse. Linen micarta handle, 2mm spine thickness, overall length just under 12 inches. In 1992, Messermeister introduced the demi-bolster so the entire edge could be sharpened heel to tip, and set a new standard with polished 15° edges that made them the sharpest German cutlery on the market. Founded by Bernd and Debra Dressler in 1981, the company is now led by their daughters Chelcea and Kirsten Dressler, making it the only fully women-owned and operated knife company in the world. They still manufacture hot-drop, hammer forged knives the traditional way across Germany, Portugal, Italy, Japan, and Asia.
